Banana Bread

Set oven to 250F. Ripe bananas are better.

  • 1 cup sugar
  • ½ cp unsalted butter, soften to room temperature
  • 2 beaten eggs
  • 1-3 tsp frozen orange juice
  • 3 very ripe bananas, mashed
  • ½ cp walnuts
  • 1 tsp baking soda
  • pinch of salt
  • 2 cps self rising flour
Beat together sugar and butter. Add beaten eggs and stir with wooden spoon. Stir in orange juice, bananas, walnuts. Add baking soda to flour. Blend and stir in to dough.
Bake in greased and floured loaf pan 1 hour or until knife in center comes up clean.
