Pumpkin Bread

Preheat oven to 325F. Butter 2 9” x 5” loaf pans. Organize a steamer set up for steaming whole pumpkin or simply boil the sections.

Ingredients:
  • 4 eggs
  • 1 cp. Honey
  • 2 cps mashed cooked pumpkin (slice whole pumpkin into pieces and steam)
  • 1 cp vegetable oil
  • 2 tsp baking soda
  • ½ cp yogurt or buttermilk
  • 3 ¾ cp whole wheat (or regular) flour
  • 1 tsp each: ground nutmeg, ground cloves, ground cinnamon
  • Alt: Add 2 cps of crumbled walnuts to batter.
In a large bowl, beat eggs, and honey. Add pumpkins & oil. Dissolve baking soda in yogurt (or in buttermilk). Sift flour with spices and add to pumpkin mixture alternately with soda mixture, blending after each addition. Pour into greased pans and bake for 1.5 hrs.
