Fried Rice

2 tbs oil
6 cups of pre-cooked steamed rice
1 medium onion, chopped
3 cloves garlic, minced
1 tbsp. soy sauce
2 eggs, beaten, fried and cut into strips
2 tbsps. scallions or chive, chopped
1 cup cooked green peas

½ cup of ham, cubed
¼ lb. chicken breast, cubed
¼ lb. small peeled shrimps
1/2 package tofu

Heat oil in pan or wok. Sauté garlic, onions, (chicken, ham, shrimp, tofu) and soy sauce. Add rice, eggs, and top with peas, scallions. Serves 12.
