Cast Iron Skillet Sweet Potato Fries

Looking for a snack this afternoon, I did a kitchen round-up and came up with sweet potato fries with mixed spices. It came out very satisfying.

Ingredients
  • 1 large sweet potato - I partially skinned it, but left on long strips of skin
  • olive oil
  • sea salt
  • powdered cumin
  • powdered paprika
  • fresh coriander
  • fresh parsley
  • 3 chopped up spicy peppers

Slice sweet potato(es) into wedges. Toss in cast iron skillet with olive oil and spices. As Post Punk Kitchen says, it is very important to make sure the wedges are well coated with oil and spices.

Bake at 425 for 10 minutes, then flip potato wedges and bake for another 10 minutes.
OR Preheat oven to 500 deg with the skillet in the oven while you are cutting and seasoning the fries. Reduce to 450, dump the fries into the hot skillet and return to oven. Bake 20 minutes, flipping once.
