Peanut Noodles

An easy, quick lunch or dinner

Ingredients
  • Bangkok Padang Peanut Sauce
  • Thin Italian noodles, egg noodles, udon noodles, or other favorite pasta
  • Soy sauce
  • Tofu - 1/4 inch cubes
  • grated carrot
  • thinly sliced cucumber
  • diced red or green pepper
  • Other options for vegetables/garnish: sesame seeds, cilantro, chopped peanuts, spicy peppers, grated ginger, scallions
Marinade cubed tofu with soy sauce.

Boil pasta, rinse with cold water and let cool.

In a large bowl, mix together pasta and chopped vegetables. Add in tofu and toss. Add in in peanut sauce. Toss gently.

Garish with sesame seeds, chopped peanuts.

Serve immediately.
