Ingredients
- Bangkok Padang Peanut Sauce
- Thin Italian noodles, egg noodles, udon noodles, or other favorite pasta
- Soy sauce
- Tofu - 1/4 inch cubes
- grated carrot
- thinly sliced cucumber
- diced red or green pepper
- Other options for vegetables/garnish: sesame seeds, cilantro, chopped peanuts, spicy peppers, grated ginger, scallions
Boil pasta, rinse with cold water and let cool.
In a large bowl, mix together pasta and chopped vegetables. Add in tofu and toss. Add in in peanut sauce. Toss gently.
Garish with sesame seeds, chopped peanuts.
Serve immediately.
