- Julienne 2 zucchini in one pan with olive oil. Set aside.
- Saute shrimp with olive oil.
- Once shrimp is cooked, add zucchini, 2 pinches of crushed saffron, salt, and heavy cream. Allow to simmer.
- Boil penne pasta in separate pot.
- Add pasta to sauce, stir, and serve.
