Potato & Parsley Casserole

Preheat oven to 350. Cooking time ~ 1 hour.

  • 6 sliced potatoes
  • 1 large thinly sliced onion
  • 4 cloves of garlic
  • parsley and dill
  • salt and pepper
  • oil and butter
Briefly saute minced or grated garlic in a skillet with 6 tablespoons of vegetable oil. Add to the bottom of a casserole dish. Layer potatoes, onions, parsley, dill, salt and pepper in 3 to 4 layers. Dot with butter. Carefully pour water into the pan, trying not to disturb the spices. The water should cover 2/3 to 3/4 of the potatoes. Cover and bake for ~60 minutes, removing the lid for the final 15 minutes.
